What's Wrong With Room Temperature? |
Nothing, if you're already peddling rotgut to your family and friends. But if you drink to enjoy the complex flavors of good wine and not to set the room a-spinning, respect your palate and keep your bottles on the cool side. Maybe you're one of the millions who have heard that red wines should be served at "room temperature." This is an ancient rule of thumb and true enough, but... only when referring to medieval rooms, my friends. See, we here in the States tend to keep our houses warmer than a wine really likes. "Room temperature" is really a reference to 'cellar' temperature. Cellar temperature is usually about 55 degrees, which is perfect for storing wine. Now, you're probably thinking "so what, wine wonk?" or something along those lines. Maybe you're wondering "what happens if I go a little crazy and serve that Oregon Pinot Noir at a summery seventy degrees? What, will it turn to vinegar or taste like wet cardboard?" Nope. What'll happen is that the 1987 St. Emilion you've aged alongside for years now will taste less like the treasure it is and more like the fortified Boone's Farm of your misspent youth. Instead of noticing the fruit forward first sip of a new Beaujolais or the slatey dryness of a good Cabernet Sauvignon, you'll be tasting alcohol. If you want alcohol, there's a Quicky Mart on the corner. If you want the finest flavors offered by the wines you buy, stick with a wine cooler. Okay, Wise Guy, What's Wrong With My Fridge Then? |
I'm glad you asked. (Although, technically, since "you," at the time of this writing, did not exist, you didn't ask... I did.) It seems reasonable to assume that a refrigerator would do the job just as well as a wine chiller, right? It seems reasonable, yes, but it's still wrong. Here's why: First, a refrigerator would keep your wines too cold, effectively retarding their maturation. (Remember 55 degrees is optimal.) Second, corks -- the key to keeping wine -- require humidity (70 percent preferably), which refrigerators are designed to remove. Third, even unopened wines can absorb strong odors -- curry, stinky cheeses, grey-green leftovers -- which might reside in your fridge. Now, aren't "you" glad you asked? |
