As a living person, you may be shocked to hear that air is our sworn enemy. Wait, no, please inhale — that's not what we meant. Air is very nice, and, you know, essential for breathing. However, it's an entirely different story when storing your food. If you store foods for any considerable length of time, air will cause them to lose their flavor and become stale. That's a bummer, too. Think about how much flavor you lose in your coffee every time you open the lid to the container. Think about those chocolate chip cookies that aren't so soft any more. And the brown sugar in your oatmeal would pack a lot more flavor if the container didn't hold so much air. Our whole world would be so much more flavorful without all the air! The Airscape is designed to remove as much air as possible from your food, then seal the container so no air can pass in or out. The idea is the same as those vacuum bags from infomercials, but this is removable, easier to use, doesn't require additional equipment, and can be opened and re-sealed at will. Here's how it works. First, you put the food you want to preserve in the Airscape's 18/8 restaurant-grade stainless steel canister. It can hold up to 32 ounces of food. Once your desired food is in the Airscape, you push in the lid. As you push the lid down, air escapes through holes in the lid. Once the lid has reached the food, simply push the lid's handle flat into the lid. This will seal off the holes in the lid, so more air can be transferred. The sealed lid also prevents ultra-violet light from reaching your food (another common detriment to fresh, flavorful food). But, if you like the aesthetics of a lid on top of the canister, there's a clear top lid included. It's just that simple, and then all your favorite foods, like coffee or cookies, will stay much fresher much longer.

I use this canister to keep a weeks fresh ground coffee for my single serve coffee maker. I grind it in my burr grinder as needed.Every morning when I open the Airscape, it smells fresh. I cannot smell anything when it is closed.I was really surprised with how much air is kept out and how well it seems to work. I like it so much, I keep trying to think of other uses so I can buy more. The only negative I can think of is that a few grains spill out every time you pull out the vacuum top. Do not hesitate.
