The Apple wireless Trackpad has replace my mouse for normal day to day use. Much like the multi-touch touchpads on the Apple laptops have really made them more usable as a mobile workstation, the trackpad has brought that experience to the desktop environment. The multi-touch gestures are really handy for switching back and forth between multiple applications, etc.
The one thing I have struggled with a bit is right-clicking on items. A two-fingered click is a right click, but its not always easy to say activate the right click menu then select the item. You can set the lower right side of the trackpad to act as a right click and that has helped a lot.
I havent worked with applications like Adobe Photoshop much yet, but I expect that it will work well there too.
